Blueberry Streusel Muffins

I was in a baking mood, but not in a cleaning one so I made these blueberry muffins using Golden Cloud Vanilla Muffin mix. I added a few handfuls of frozen blueberries and made a streusel topping to give these an extra oomph! It did not disappoint.

Here is the recipe for the streusel topping I made:

INGREDIENTS:

  • 3 Tb butter
  • 6 Tb flour
  • 3 Tb sugar
  • 2 Tb oats

METHOD:

  1. Rub the cold butter together with the other ingredients, using your fingertips until it resembles breadcrumbs.
  2. Sprinkle over any cake/muffin mixture for a delicious crispy topping.
  3. Bake until golden brown.
