I can’t sell these bowls to you in any other way but to say look at the pictures, I guarantee they are delicious. Topped with cheese, coriander, spring onion, guacamole and corn chips it is spicy, has a great balance between soft and crunchy textures and is utterly satisfying.
Ingredients:
- 250g ostrich mince
- 1/2 onion, chopped
- 2-3 small garlic cloves
- 1 small cinnamon stick
- 1x tin red kidney beans, rinsed
- 1x tin chopped tomato
- 2x tomatoes, blended
- 2Tb tomato sauce or purée
- 1 tsp salt
- 1tsp cayenne pepper
- 1tsp ground cumin
- 1tsp ground coriander
Method:
- Sauté the onion and garlic in a little bit of oil.
- Add the ostrich mince and break it up as it cooks. Let it brown evenly.
- Add the chopped tomato, blended fresh tomato, spices, tomato sauce and a little bit of water.
- Simmer on low- medium heat until the tomato starts to reduce.
- Serve in bowls with the following toppings: grated cheese, guacamole, spring onion, coriander, corn chips, sour cream or yoghurt.
Tips:
Use beef mince if you can’t get ostrich mince. Use less oil if you need to be heart healthy, ostrich is also a better option health wise. Use as many or as little toppings as you like. If you need a carbohydrate, serve with brown rice but leave out the corn chips.
