Savoury Corn Waffles

These yummy savoury corn waffles came to life because I adore the corn waffles with poached eggs from Woolworths Cafe – it’s my go-to breakfast (or sometimes even lunch!) treat. One evening, feeling a bit hungry, I decided to turn this beloved breakfast into a satisfying dinner. So, I jazzed it up a bit by serving the waffles alongside some crispy crumbed chicken and a dollop of spicy sriracha mayo. The best part about these waffles? You can totally make them your own! Toss in whatever you fancy – maybe some cheese, herbs, or chopped veggies. These corn waffles aren’t just about a meal; they’re an open invitation to get creative in the kitchen and make every bite your very own flavorful adventure.

INGREDIENTS:

  • 1 cup flour
  • 2tsp baking powder
  • 1/2 cup sweetcorn kernels***
  • 2 spring onions, chopped
  • 1/4 – 1/2 red onion chopped
  • coriander (as much as you like), chopped
  • 1 fresh green chilli, finely chopped
  • 1 tsp salt
  • 1 egg
  • 1 cup milk
  • grated cheese – optional

METHOD:

  1. Add all dry ingredients to a bowl, then add wet ingredients and mix.
  2. Add all greens, sweetcorn last.
  3. Spoon into waffle maker and cook until golden and crispy.

*** NB: When I made this, I used a tin of sweetcorn instead of the 1/2 cup of kernels and it made the mixture a bit too sticky. If you want to use a tin of sweetcorn, it would make really nice sweetcorn fritters!
