So, I have a confession to make. The first time I tried KFC Zinger Wings was this week. Before that I had only eaten their crunch burger once ( a few years ago) and before that I had only eaten their chips (which are crap by the way). I was surprised by how good the zinger wings were but and this is a big but… I don’t see myself eating from there very often. I have always associated KFC with being unhealthy, headless chickens etc. and figured I can make my own instead of buying it with all the added sugar and unmentionables you can’t see, which is why this next meal was inspired by KFC!

Ingredients:

  • 300g mini chicken fillets or chicken breasts cut into strips
  • 2 – 3 Tb flour for coating
  • 1 Tb cayenne pepper
  • 1 tsp parsley or mixed herbs
  • salt and pepper to taste
  • bread crumbs
  • 1 egg, beaten with a splash of milk

Method:

  1. Season the flour with the cayenne pepper, herbs, salt and pepper.
  2. Coat each piece of chicken in flour and dust the excess off.
  3. Dip in egg wash and coat in breadcrumbs. If you prefer a crispier, crunchier coating use panko crumbs or double coat each piece of chicken.
  4. Place the chicken on a baking sheet and leave in the freezer until you need it. The freezer will keep the coating from going soggy compared to keeping it in the fridge and will also help with the chicken not sticking to the pan.
  5. Put a little bit of oil into the pan and bake in a pre-heated oven at 180-200 degrees celsius for 15 – 20 minutes until golden brown.
