Ever wondered what to do with that cornflake dust at the bottom of the packet? If you eat it like cereal its all stodgy – which I hate. This is a much better alternative with pretty surprising results.

Ingredients:

  • 2 Tb Mayonnaise
  • 4 chicken breasts
  • 1 tsp ground green chilli (use less if you don’t like it hot)
  • Salt and pepper to taste
  • a good squeeze of lemon juice
  • Cornflake dust + extra crushed cornflakes for coating

Method:

  1. Cut each chicken breast horizontally in 3 pieces.
  2. Mix the rest of ingredients and marinate chicken pieces overnight or for a few hours.
  3. Coat each piece of marinated chicken in the cornflakes. Drizzle 1 Tb of oil over the coated chicken.
  4. Place in an oven tray and bake in the oven until the chicken is cooked.
  5. Serve with my sweet curried pasta salad.

Tips:

Freeze half of this to use for another day. You can fry the chicken or bake them whichever you prefer. It has a southern vibe – would be great in a burger!

Step by Step

1.Marinating cut pieces of chicken in mayonnaise, green chilli, white/black pepper and lemon juice.

2. Coat each piece in crushed cornflakes.

3. I only used 1tablespoon of oil too cook 1/2 of the chicken pieces.

4. Use a non stick baking sheet, therefore less washing up Capetonians!

  2. Thanks for the cool recipe, so easy too!! I am always so nervous about making chicken in the oven! I haven’t mastered getting the perfect cook and tenderness.. Please tell us how long you baked it and at what temperature 🙂

    1. Hi Aysha!

      No need to be nervous, you can’t go wrong with this recipe. I would set the oven for 180 – 200C depending on how hot/slow your oven is and bake for 10 – 15 minutes. The pieces of chicken are quite thin and do not take long to cook. If you do 200C then 10 minutes until golden and crisp or 180C for 15 minutes. Cut a piece open and if its still pink leave it in for another 5 minutes. Good luck! x Ilhaam
