If you know me, you know that Breakfast is my favourite meal of the day. I can eat it in the morning or at night when the rest of the world is eating dinner. Eggs on toast, boiled eggs, poached eggs, egg wraps… The list is endless and I can go on and on. I sincerely believe that simple food is the best food. While I am at work I am required to make elaborate dishes but when I am home I find comfort in things like fried eggs and toast with peanut butter and strawberry jam! Fried Eggs and Rosti:

Ingredients:

  • 1 potato, grated and excess water squeezed out
  • Clarified butter/ghee or canola oil
  • Eggs for frying (2-4)
  • Chopped coriander to serve
  • Sriracha or sauce of choice
  • Fried onions
  • Chopped green onion (optional)
  • Toast or fresh soft bread to serve
  • Salt and pepper

Method:

  1. In a frying pan with a little bit of clarified butter (ghee) or oil, spread the grated potato out and cook on medium heat. Make sure there are no big gaps and the potato is spread out evenly. Turn over once sides are starting to turn golden brown and crisp. Cook the other side.
  2. Once the rosti has cooked, turn it out onto a plate or serving dish.
  3. Add a little more ghee or oil to the pan and fry your eggs. To cook the top of the eggs put a lid over the frying pan. I prefer my yolks runny so just a few minutes. If you prefer them hard, cook a little bit longer.
  4. Turn eggs out onto the rosti, and sprinkle chopped coriander, fried onions, and sriracha over. You can add as many toppings as you like! Serve with fresh crusty ciabatta or warm toast.

Tips:

You can cook the onion and chilli into the eggs if you like, just add them to the pan over the eggs while they are cooking.

Poached eggs work wonderfully with rosti too!
