My Hungry Husband

Husbo laughs at me because I (apparently) can’t pronouce “Mutter” correctly. He can speak Urdu and I can’t. This recipe is so quick and easy, you can eat it as a meal on its own, or have it as a side dish.

Ingredients:

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 small red onion, grated (using the large side of the grater)
  • 240g button mushrooms, sliced thickly
  • Salt to taste
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ½ teaspoon red cayenne pepper or red chilli powder
  • ½ teaspoon freshly ground black pepper
  • ½ cup green peas
  • Fresh coriander to garnish

Method:

  1. In a small pot, heat the oil and add the cumin seeds and wait until the seeds begin to sizzle.
  2. Add in the grated onion and cook until the onion begins to turn softly golden.
  3. Add in the mushrooms and mix well.
  4. Stir in the salt, powdered coriander, cumin, cayenne pepper and black pepper with the green peas and mix well.
  5. Cover and cook for five minutes.
  6. Stir in coriander and serve.

Tips:

You can add spinach if you want to up the veggies. This would go really well with Khuri Kitchrie.
