One of the first food bloggers I started to follow was Gina Homolka from Skinny Taste. She took favourite recipes and gave them a healthy spin. They were always easy to make and didn’t use complicated ingredients. I loved that they were all family style and there was nothing over the top or pretentious about her cooking. Just good ‘ol home-made food.

These brownies are from her website and they are my absolute favourite. I had a tin of kidney beans leftover from my Four Tins, Eight Dishes post over here, and I never got around to making that chilli con carne so I decided to make these instead!

You can find the recipe for the brownies here. They contain kidney beans, cocoa powder, eggs, sugar, oil, milk, vinegar, baking powder, baking soda and coffee.

I substituted the balsamic vinegar for brown spirit vinegar as that was all I had and used regular milk instead of almond milk. I also used 1/2 cup of sugar instead of 3/4 cup and just sprinkled some chocolate chips on top instead of putting them in the mixture.

Just toss everything into a food processor and blend! It’s as easy as that.
