My Hungry Husband

This is a really refreshing and simple salad to make. It goes perfectly with my Chicken Chow Mein Recipe and strikes that balance between tangy and sweet. Serve it with other Thai dishes to create a mouthwatering flavour.

Ingredients:

  • 1/3 cucumber
  • 1/2 red onion
  • 2 Tb Rice Vinegar
  • 2 tsp sugar

Method:

  1. Cut the cucumber in half, de-seed it by scraping all of the seeds out with a teaspoon and slice into thin pieces.
  2. Try to make sure you cut your cucumber the same size and thickness so they pickle evenly.
  3. Thinly slice the red onion and mix it with the cucumber.
  4. Mix the rice vinegar with the sugar and leave aside.
  5. Only pour over the salad 10 minutes before you are going to serve it.
