Roasted Vegetable Marinade
I absolutely love this marinade for roasted vegetables. You can use any selection of veggies but I find the following most suitable: sweet potato, butternut, courgettes, carrots, red onion and mielies (corn on the cob).
- 1 tsp brown sugar
- 1 tsp dried oregano
- 1/2 tsp chilli flakes
- salt to taste
- black pepper
- 2 Tb butter, melted
- lemon juice
- Melt the butter with the brown sugar, origanum, chili flakes, salt, black pepper in the microwave.
- Add enough lemon juice until it cuts through the butter.
- Pour over veggies and roast in the oven until caramelized.
