My Hungry Husband

I absolutely love this marinade for roasted vegetables. You can use any selection of veggies but I find the following most suitable: sweet potato, butternut, courgettes, carrots, red onion and mielies (corn on the cob).

Ingredients:

  • 1 tsp brown sugar
  • 1 tsp dried oregano
  • 1/2 tsp chilli flakes
  • salt to taste
  • black pepper
  • 2 Tb butter, melted
  • lemon juice

Method:

  1. Melt the butter with the brown sugar, origanum, chili flakes, salt, black pepper in the microwave.
  2. Add enough lemon juice until it cuts through the butter.
  3. Pour over veggies and roast in the oven until caramelized.
