This next recipe is inspired by the Woolies Sweet Curried Pasta Salad. I love the flavour combination of this salad but don’t think the price is worth the portion. Now that I have figured out how to recreate it at home, I won’t have to worry about that anymore!
Try it out and tell me if you think it’s a close match.
Ingredients:
- 3-4 Tb mayonnaise
- 2-3 Tb lemon juice
- 1 Tb sriracha sauce
- 1 tsp dijon mustard
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1 spring onion, chopped
- 2 celery sticks, sliced
- fresh coriander, chopped
- handful of sultanas
- 5-6 Turkish apricots
- cooked pasta of your choice
Method:
- Mix all ingredients together.
- Serve with my crispy cornflake chicken.
Step by Step
1. Cut all the fresh ingredients together.
2. Add all the spices, sauces and lemon juice to the mayonnaise. Mix well.
3. It should look like this.
4. Add all the greens to your cooked pasta and pour dressing over. Mix well until everything is coated.
Hi. How many does this serve? I want to make it for 8 ppl. Thanks
Hi Akira
This served 2 as a side dish and I made about 4 handfuls of pasta. For 8, you would probably need 500g of pasta (fusili is probably a nicer shape) and times the rest of the ingredients by 4. Adjust to taste. Hope they all enjoy it x
So glad I found your site. I also love the sweet curry pasta from Woolies, and was looking for a similar recipe to make at home. I made it without cumin and coriander (as I did not have it available in the pantry last time). Wasn’t too bad, but have stoked up with spices this weekend, and have book marked your recipe for future use.
At some point I also was obsessed with the Woolies Tikka Chicken paste recipe, and contacted them to find out the recipe. They sent it to me, but I have lost it since. Another favourite is of course their Pickled Fish, I really like their sauce.
Hi Harriet! I’m so glad you are a fellow lover of this pasta salad, it’s delicious. I can’t believe they sent you the recipe, thats so cool!
I haven’t tried their pickled fish but love using their convenience foods as inspiration for recipes hehe.
