My Hungry Husband

I love shakshouka, the husbo on the other hand doesn’t care too much for the tomato chutney. This is a great variation instead and is filling!

Baked Beans Shakshouka

Ingredients:

  • ½ onion sliced
  • 1 tin baked beans in tomato sauce
  • 1 tsp garlic paste/or 1 tsp ginger/garlic paste
  • ¼ tsp turmeric
  • 1 tsp ground red chilli
  • 1tsp ground coriander
  • 1tsp ground cumin
  • 4-6 eggs
  • Coriander
  • Salt and pepper

Method:

  1. In a shallow pot or frying pan, add some oil and saute the sliced onion.
  2. Add the spices and garlic paste (turmeric, chilli, cumin, coriander) and cook for a little bit then add the baked beans. Cook for a few mins then make wells in the baked beans.
  3. Crack open an egg into each well and cover with a lid to steam/cook.
  4. Sprinkle chopped coriander over before serving and plenty of salt and black pepper.
