I love shakshouka, the husbo on the other hand doesn’t care too much for the tomato chutney. This is a great variation instead and is filling!
Baked Beans Shakshouka
Ingredients:
- ½ onion sliced
- 1 tin baked beans in tomato sauce
- 1 tsp garlic paste/or 1 tsp ginger/garlic paste
- ¼ tsp turmeric
- 1 tsp ground red chilli
- 1tsp ground coriander
- 1tsp ground cumin
- 4-6 eggs
- Coriander
- Salt and pepper
Method:
- In a shallow pot or frying pan, add some oil and saute the sliced onion.
- Add the spices and garlic paste (turmeric, chilli, cumin, coriander) and cook for a little bit then add the baked beans. Cook for a few mins then make wells in the baked beans.
- Crack open an egg into each well and cover with a lid to steam/cook.
- Sprinkle chopped coriander over before serving and plenty of salt and black pepper.
