These little breakfast pots are inspired by the popular Tasha’s breakfast dish but more importantly inspired by Citrus fruit that’s in season. I find since berries became the be all and end all of fruit, people have demonized other fruit like citrus and that’s just not nice! Oranges have feeling too.
So as part of a three segment “Eid Inspiration for 2018” post , I’ve made 3 different recipes that contain citrus. So add those oranges, lemons and grapefruits to your shopping list!
INGREDIENTS:
makes 2 glasses
- 1 orange segmented
- 1 grapefruit segmented
- double cream yoghurt
- granola (I used my homemade Chocolate Granola)
- pistachio nuts
- dried fruit (optional)
- pomegranate arils
- honey for drizzling
- mint
METHOD:
- Put a spoonful of yoghurt at the bottom of a glass. put 1 – 2 segments of oranges and grapefruit, then top with granola and the optional dried fruit.
- Put another spoonful of yoghurt over and repeat the process. You can fill the glass to the top or stop when it’s 3/4 full. The double cream is quite filling!
- Garnish the top with more citrus segments, granola, pomegranate, mint and honey if you like!
- That’s it you’re done.
TIPS:
These stand very well, if you need to do more for Eid breakfast, make them a few hours before serving. Cling wrap them and keep in the fridge and take out 30 mins before eating so they’re not ice cold.
