It was one of those days where I finished late, still had to get groceries before I got home and really didn’t feel like cooking but did not care for take out. One of my favourite things to order from Bibi’s Kitchen in Wynberg is their Shrimp Masala Salomie, but at the price for one person it’s far too expensive. This shrimp masala is pretty epic and for R34.99 for a packet of 400g shrimp I’d say its a no brainer.
Shrimp Masla
Ingredients:
- oil for cooking/ghee
- 4 – 6 curry leaves
- 1 tsp mustard seeds
- 2 whole green chillies, sliced lengthways
- two handfuls ready fried onion or two onions, sliced and fried till golden brown
- 2 tsp red masala or 1tsp of each garlic, ginger and red chilli
- 1.5 tomato, blended without water
- 125ml tomato puree
- 400g shrimp, deveined
- salt to taste
- coriander for garnish
Method:
- In a wide pot, put a generous amount of oil or ghee so that it covers the bottom.
- Add the mustard seeds, curry leaves and green chillies and fry until the mustard seeds sizzle.
- Add the ready fried onion, chilli paste and fry but do not burn.
- Then add the tomato, puree and cook until combined and thick.
- Add the shrimp, cook for 5 minutes and check the seasoning. Add 1/2 tsp – 1 tsp salt if needed.
- Garnish with coriander before serving.
- Serve with rice, roti or spring onion paratha.
