My Hungry Husband

A Kathi Roll is a popular Indian street food made from a flatbread, egg omelette, chicken filling, salad and sauces. We woke up late on Sunday morning so instead of making eggs, I made this! It was the perfect brunch meal.

Ingredients: To make 1 Kathi Roll

  • 1 tortilla
  • 1 egg
  • milk or water
  • salt and pepper to taste
  • 1 green chilli
  • fresh coriander, chopped
  • tomato, onion salsa or leftover salad
  • green/ red cabbage, shredded
  • sauces of your choice

Method:

Beat egg with a splash of milk or water for your omelette.

Heat oil in a frying pan and cook omelette, season with salt, pepper, coriander and green chilli.

Place tortilla over omlette, and allow to heat up.

Flip tortilla over onto a plate, omelette side up.

Add all your fillings and sauces. Don’t be afraid to load it up, this is a great way of using up leftovers as well as getting some veg in there. Roll up and enjoy!
