Last week most of my dishes had a Mexican theme and this week got me craving for all things Mediterranean! Tagine is a North-African and Middle Eastern dish of slow cooked meat and dried fruit that gets its name from the conical, clay pot in which it is cooked. I do not own a tagine and slow cooked this in a normal pot. It is a fragrant, mild dish that is often served with couscous. I garnished mine with toasted almonds and lots of coriander.

Moroccan Beef Tagine
Ingredients:
- 500g cubes of good quality beef
- 1 onion, sliced
- 2 cinnamon sticks
- 1 garlic clove
- 1 tsp tumeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground ginger
- 1 tsp paprika or cayenne pepper
- 2 tomatoes
- 6 pitted dates
- handful of Turkish apricots
- toasted sliced almonds for garnish
- chopped coriander
Method:
- In a large pot, add some oil and fry the sliced onion and cinnamon sticks. Once the onions are soft, add the chopped garlic clove and pieces of meat. Brown the meat slightly.
- Once all the liquid from the meat has evaporated, add the spices, 2 blended tomatoes, apricots and dates. Add enough water or stock until it just covers the meat.
- Simmer on low heat for 45 minutes – 1 hour. When ready to serve add chopped coriander and toasted almonds to garnish. Adjust the seasoning if needed.
- Serve with couscous.
