My Hungry Husband

This one was of those “make up as I go along” recipes. I knew what I wanted to eat and had an idea of the flavour combo so I bought a pineapple and threw some things together and came up with this.

Sweet & Sour Chicken

Ingredients:

  • ¼ onion, cubed
  • 2 chicken breasts, cubed
  • 1tsp ground ginger (powder)
  • 1tsp garlic & chilli paste or 1tsp of each separately
  • 2TB heaped tomato sauce
  • 1/3 cup brown vinegar
  • ¼ cup soya sauce
  • 2TB brown sugar
  • 1 cup assorted peppers, cubed (green, red, yellow)
  • ¼ pineapple, sliced
  • Salt to taste
  • 1 cup rice, boiled.
  • 3TB sesame seeds, toasted
  • Handful of coriander
  • 3 spring onions, chopped

Method:

  1. Sauté the onions in a little bit of oil, add the chicken, chilli/garlic and ground ginger. Cook until any water has evaporated.
  2. Add sauce ingredients (tomato sauce, brown vinegar, brown sugar) and reduce until thick.
  3. Stir through the peppers and pineapple.
  4. Sprinkle chopped spring onion over before serving.
  5. Serve with rice topped with toasted sesame seeds and coriander.

Tips:

Jasmine rice works really well. If you want a thicker sauce, make a slurry of 1tsp maizena (cornflour) with a little bit of water and add to curry after you have added the sauce ingredients. Keep stirring as you add the slurry so there are no lumps (the worst!).

The sauce doesn’t make that much so double up ingredients if you want to make more.
