I had a few bits and bobs left in the fridge from things I had made last week (!) Eek. Obviously I had to use them up because wastage. This is what I had: 1 small butternut, 1 chicken breast, 1/2 tin coconut milk. Doesn’t seem like much but I managed to rustle up an easy budget buster of a meal.

Thai Butternut Soup

Ingredients:

  • 1 small butternut, cubed
  • 1/2 onion, chopped
  • oil
  • 1 tsp red masala (ginger, garlic, red chillies)
  • 1/2 tin coconut milk
  • water
  • salt

Method:

  1. Heat a little bit of oil in a pan, sauté the onion but do not brown.
  2. Add the cubed butternut and sauté for a few minutes, mixing the butternut every now and then. Add in the red masala and cook.
  3. Add enough water to cover the butternut and simmer on low heat. When the butternut has softened take off the heat and leave to cool.
  4. Blend the butternut, if most of the liquid has evaporated you can add a little to help it along.
  5. Once blended and smooth, return to the pot and back onto the heat. Add the coconut milk and heat, check the seasoning and adjust the salt if needed.

Chicken Quesadilla’s

Ingredients:

  • 1 chicken breast, cubed
  • 1/2 onion, sliced
  • peppers, mushrooms
  • 1 tsp red masala (ginger, garlic and red chilies)
  • spring onion
  • fresh coriander
  • 4-6 tortillas (makes 2 – 3 quesadilla’s)
  • cheese

Method:

  1. Heat a little bit of oil in the pan, add the onion and sauté.
  2. Once the onion has softened, add the chicken and masala. Fry until almost cooked then add your veggies.
  3. Take off the heat and leave to cool, then add chopped spring onion and coriander.
  4. To assemble the quesadilla

  1. This looks great! I wanted to make something similar but needed ideas. Is the red masala a paste? Where can I find it?

    1. I got this tub from Johannesburg, but you can buy this brand called Amina’s which I’ve seen at some local spice shops like Cape Spice Emporium which is on Lansdowne road and also Simply Spice in Cavendish Square. She makes a really nice red chili paste that I’ve bought before. The pastes make my life so easy! Literally changed the way I cook.

    1. Thanks Melissa! It’s terrible for the environment too. So much of food gets wasted that is perfectly good to use.
