Obviously I had to use them up because wastage. This is what I had: 1 small butternut, 1 chicken breast, 1\/2 tin coconut milk. Doesn’t seem like much but I managed to rustle up an easy budget buster of a meal.<\/p><\/blockquote>\n
Thai Butternut Soup<\/p>\n
Ingredients:<\/span><\/p>\n

- 1 small butternut, cubed<\/li>\n
- 1\/2 onion, chopped<\/li>\n
- oil<\/li>\n
- 1 tsp red masala (ginger, garlic, red chillies)<\/li>\n
- 1\/2 tin coconut milk<\/li>\n
- water<\/li>\n
- salt<\/li>\n<\/ul>\n
Method:<\/span><\/p>\n

- Heat a little bit of oil in a pan, saut\u00e9 the onion but do not brown.<\/li>\n
- Add the cubed butternut and saut\u00e9 for a few minutes, mixing the butternut every now and then. Add in the red masala and cook.<\/li>\n
- Add enough water to cover the butternut and simmer on low heat. When the butternut has softened take off the heat and leave to cool.<\/li>\n
- Blend the butternut, if most of the liquid has evaporated you can add a little to help it along.<\/li>\n
- Once blended and smooth, return to the pot and back onto the heat. Add the coconut milk and heat, check the seasoning and adjust the salt if needed.<\/li>\n<\/ol>\n
Chicken Quesadilla’s<\/p>\n
Ingredients:<\/span><\/p>\n

- 1 chicken breast, cubed<\/li>\n
- 1\/2 onion, sliced<\/li>\n
- peppers, mushrooms<\/li>\n
- 1 tsp red masala (ginger, garlic and red chilies)<\/li>\n
- spring onion<\/li>\n
- fresh coriander<\/li>\n
- 4-6 tortillas (makes 2 – 3 quesadilla’s)<\/li>\n
- cheese<\/li>\n<\/ul>\n
Method:<\/span><\/p>\n

- Heat a little bit of oil in the pan, add the onion and saut\u00e9.<\/li>\n
- Once the onion has softened, add the chicken and masala. Fry until almost cooked then add your veggies.<\/li>\n
- Take off the heat and leave to cool, then add chopped spring onion and coriander.<\/li>\n
